Fiber as a rate-limiter

Fiber is fruit’s built-in rate limiter: it slows sugar absorption and makes excessive intake physically harder. Juicing preserves the sugar while removing much of the constraint that made consuming it tolerable.

A glass of juice can retain what you wanted least from the fruit—its sugar—while discarding what kept that sugar in check: the fiber.

The constraint is part of the food

In whole fruit, fiber does more than accompany sugar. It slows the sugar’s absorption and helps make overconsumption physically difficult. The benefit therefore lies partly in the package: sugar arrives bound to a constraint on both speed and quantity.

Juicing separates the reward from its rate limiter. Once the fiber is removed, the sugar becomes easier to consume quickly and in greater amounts. Calling the result “fruit” can invite an Appeal to Nature: the ingredient’s origin sounds wholesome even though the processing has changed how it reaches the body.
