A dish or practice is often shaped less by taste than by the demands of production. When many people must be served quickly and cheaply, batchable, repeatable formats beat those requiring individual attention.

Pav bhaji began not as a carefully plated delicacy but as leftovers: vegetables mashed together into a stew in one large patila. Precisely because it looked less like “regular food,” it could be made for a crowd with unusual ease.

The vessel selects the format

Large-scale production rewards operations that can be shared across every serving. One pot replaces many separate preparations; mashing absorbs varied leftovers into a consistent base; portioning the finished stew is faster than assembling each meal independently. The constraint therefore selects the recipe: ingredients and techniques survive not only because they taste good, but because they reduce attention, time, and variation per plate. This is Economies of Scale expressed through food form.

The big-patila advantage

Pav bhaji’s stew format allowed leftover vegetables to be combined, mashed, and cooked in large quantities. Its identity cannot be separated from the production problem it solved.

Scale explains the form, not the whole dish

A scalable format can explain why a preparation is practical and repeatable, but this evidence does not show that production constraints alone determined pav bhaji’s ingredients, flavour, popularity, or later evolution. A format still has to be acceptable enough for people to keep choosing it.

Redesign the unit of work

Tomorrow, take one task you repeatedly produce for several people and identify the step performed separately for every recipient. Replace that step with a shared base—a batch, template, standard component, or single preparation—and leave only the final adjustment individualized.
