A replacement can displace an established trait when it is dramatically easier to produce. Adoption may track production constraints more closely than ancestry, prestige, or tradition.

Chili feels inseparable from Indian food, yet it reportedly gained ground over black pepper for a blunt agricultural reason: pepper needed water and coastal conditions, while chili could grow almost anywhere.

Abundance rewrites tradition

Production difficulty acts as a selection pressure. When an older ingredient depends on narrow growing conditions and a substitute thrives across many environments, the substitute becomes easier to obtain repeatedly and at scale. That availability makes routine use easier, and routine use can eventually look like timeless tradition.

The crucial comparison is therefore not merely taste against taste. It is the entire production constraint of one trait against another: where it can be grown, how reliably it can be supplied, and how widely people can access it. A large enough advantage there can accelerate substitution.

Black pepper’s demanding growing conditions limited its production, while chili’s broad growability helped it spread rapidly through food. The newer ingredient won not because it was more ancestral, but because it was easier to reproduce across places.

Ease is an advantage, not a complete explanation

This case shows that low production constraints can speed replacement; it does not establish that ease alone determines what people keep. Nor does it tell us whether every easier substitute will match the older trait’s taste, function, status, or hidden costs—the concern captured by Substitution Effect.

Map the constraint before explaining the preference

When a newer practice seems to have defeated a deeply rooted one, compare their production maps: list the conditions each requires and the places each can be produced reliably. If one option escapes a bottleneck the other cannot, test that constraint advantage before attributing the shift entirely to changing tastes.
